If you know me, then you know I LOVE to eat! I'm notorious for posting photos on social media of my favorite treats while traveling or even some of my own creations I whip up in the kitchen. So I figured, why not dedicate a page solely to food?
Below are some of my favorite dishes I've tried around the globe and created on my own. If you're in the area of any of these places, be sure to check out my recommendations! Also, feel free to make any of these recipes and let me know how it turns out!

FOOD

No-Knead Artisan Bread

Ingredients:

  • 3 cups bread flour

  • 2 tsp salt

  • 1/2 tsp active dry or instant yeast

  • 1 1/2 cups warm water
     

Instructions:
Combine dry ingredients in a large bowl. 
Add water and stir until a shaggy dough forms.
Cover bowl with plastic wrap.
Let rise at room temp for 10 hours.
Preheat oven to 450°F.
Put Dutch oven into oven with no lid for 30 mins.
Turn dough onto floured surface with floured hands until ball is formed.
Cover dough loosely with plastic wrap and rest 30 mins.
With floured hands, put dough into Dutch oven.
Cover with lid and bake for 30 mins.
Remove cover and bake for 12 mins.
Remove from oven and let cool before cutting.

Vegan Smoothie Bowl

Ingredients:

·       1/2 avocado

·       1/2 green apple

·       1 cup power greens

·       1 cup frozen berries

·       1 cube frozen ginger

·       2 celery stalks

·       fresh berries 

·       granola

·       honey

·       splash of apple cider vinegar

·       unsweetened coconut

Instructions:
Combine apple cider vinegar, avocado, celery, ginger, green apple, frozen berries, and power greens in a blender.
Blend until smooth, yet thick (may need to add water).
Put mixture in a bowl and top with fresh berries, coconut, granola, and honey.

Vegan "Fridge Dump" Soup

Ingredients:

·       basil (fresh)

·       broccoli

·       carrots

·       chives (fresh)

·       celery

·       garlic

·       golden potatoes

·       kale

·       lime thyme (fresh)

·       mushrooms

·       Nature's Seasoning

·       red chili pepper flakes

·       yellow onion

​

Instructions:
Add all ingredients and seasonings to taste into crock pot.
Fill with desired liquid of equal parts vegetable broth and water.
Cook until desired softness.

Featured Favorites

Who would've thought that you could find amazing fried chicken in Denver? Believe it or not, this southern gal did! The fried chicken sandwich here is fabulous - dazzled with applewood-smoked bacon, pepper jack cheese, fried pickles, red onions, and ranch dressing all sandwiched on a locally-made brioche bun. You can also enjoy it in a smaller form (as it can be quite messy) as sliders during their Happy Hour special, which is just as good as the sandwich itself!
I call this place probably my favorite spot to grab some grub, but also the views on top of Viewhouse cannot be beaten! With the restaurant overlooking not only the city but also the Rockies stadium, you can sit back and relax while having a perfect picture spot. This place is perfect to enjoy Happy Hour specials and try out some local brews, or simply socialize with friends, as it has three stories full of entertainment ranging from live bands to cornhole on the lawn. It'd be hard to beat this place as my favorite dining spot!

The Theory Burger

Burger Theory is the epitome of a "burgers and beer" joint. They have a wide variety of beers on tap (which if you're an IPA fan, I highly recommend one of their west-coast style brews) as well as enough of an assortment of burgers that the possibilities are endless! I fortunately was able to feast on a new creation of theirs, the Theory Burger. The tagline, "Too good to be real" is definitely appropriate for this burger! It comes cooked per request (and to perfection if I do say so myself), stuffed with Guinness aged cheddar cheese, and topped with fresh arugula, garlic aioli, and fresh berry habanero jam, served on a challah roll. The combination of flavors is phenomenal! I'm hopeful that they'll add this to the regular menu so I can come back and enjoy it again!

The Eggette

If you noticed the three photos at the top of this page, you'll see I'm holding something in a picturesque way that looks like some sort of waffle dessert. Let me introduce you to the "eggette" - a creation by some genius who decided to make a sort of ice cream cone out of an ACTUAL light, fluffy, warm waffle. MY GOSH, YA'LL. The combination of the warmth of the waffle and the coolness of the ice cream, as well as the flavors, is like none other! They will let you choose your ice cream flavor(s) and toppings yourself, but if you can't decide then no worries - there are plenty of their own concoctions to choose from: a sweet-tooth lover's dream for sure! This thing was so good I literally went back the next week to get another one, no joke. And if this doesn't sound appealing to you then no worries - they have a variety of beverages, ice cream, sandwiches, and crepes - something for everyone with any craving!
